Duxbury Bay, the harbor and home of generations of fishermen, is also the home of Eagle’s Nest Oysters. Located in the elbow/bend of the bay, Eagle’s Nest Oysters grow along the mudflats of a natural habitat that blends the fresh water of nearby springs with the salt water of the Duxbury bay making for a delicious oyster.
About Us
Steve Gilbert is the quintessential fisherman and Duxbury native who knew from a very young age that trolling the nearby waters was something he was drawn to do. Over the course of thirty years, Steve has fished, netted, captured and raked his way to provide a variety of fish and mollusks for local seafood retailers. In 2003, he turned to oyster farming in the bay that he calls home and along with a great crew works the shallow waters of his oyster farm rotating the small seedlings that mature into some of the most delicious oysters along the coastline of the South Shore.

How it Works
Tiny oyster seeds are grown in tanks, referred to as upwellers that are located in specially designed floats that rest in the harbor. After several weeks of growth, the seeds are sifted and sorted by size and transferred to a nursery made up of metal cages and shelves where they grow for several more months before being planted in the mudflats. Harvesting the oysters by hand is labor intensive for the crew, but these oysters are worth the wait. The whole growing process takes about 18 months, so continuous attention to the rotation of the oyster crops is critical to the success of the Eagle’s Nest Oyster farm.
